Spaghetti Squash!

I made it two days ago using Danielle’s instructions. The fam bam has always been curious about it so I embraced my inner cook and got to it. I don’t have the best track record when it comes to cooking (baking, I can do) and of course, as simple as the instructions were, I was still able to mess things up (shredded the wrong way, got short little pieces). *sigh*

After I fixed my shredding technique I added garlic marinara sauce and chowed down…then spat it out. I expected a noodle/pasta-like texture but it was crunchy. I likened it to eating a tasteless onion but others have said it’s like pasta al dente.

My Mom came to the rescue when she showed me a bag of Hungry Girl noodles which are made out of soy beans. I’ll probably be using this if I ever want or feel the need to eat guilt-free “pasta”. I love the real stuff and don’t mind eating it, carbs and all!

Just wanted to clarify that it wasn’t bad (for what it was), just not what I was expecting. The only similarities it has with pasta is appearance after you fork it.

    Hey cuz, the first time I had Spaghetti Squash was years ago in Hong Kong. It was prepared with butter and lots of fresh herbs, salt/pepper and I thought it was delicious. Mebbe try it that way?
